Mexican Style Jacket Potato with DIY Chipotle Aioli

This dish is simple, easy to make, healthy and full of flavour!

Mexican style jacket potato with chipotle aioli is so fresh and the perfect meal to whip nice and quick. Just plan ahead so you can pop the sweet potato in the oven.

Using our Chipotle Aioli from our DIY Condiments range takes this recipe to the next level. This creamy dressing is the perfect topper! Make sure you’re using a stick blender or something with a small base, as you’re only making a small amount of sauce. Don’t forget to add in your oil very gradually while blending. Enjoy!



  • 1 medium sweet potato
  • 3/4 C black beans
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp chilli powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 Avocado
  • 1/4 cup red onion
  • 1 fresh lime
  • decent pinch of sea salt
  • drizzle Chipotle Aioli from our DIY Condiments range on top
  • coriander to garnish



Preheat your oven to 200°C

Pierce the sweet potato with a fork all over and wrap up in foil

Bake for approx. 1 hour. You can keep checking by piercing to see if it's soft and ready

When your potato is almost ready, rinse your black beans well and place in a pan on a medium heat along with olive oil, spices and fry for around 3-5 minutes, really just to absorb the flavours then set aside

Using a fork, mash the avocado, squeeze some fresh lime, add salt and mix well

Once your spud is ready, dress it with beans, avocado, fresh lime, coriander and your DIY chipotle aioli
