Loaded Banana Muffins

Our Loaded Banana Muffins are a delicious snack for breakfast, lunch or any time throughout the day! Simple and satisfying, it’s also a versatile recipe that can make three different types of muffins, depending on what you decide to mix in, whether it’s nuts, choc chips or dried fruit. A budget-friendly meal prep idea and perfect for the whole family, this recipe makes 12 large muffins or 24 mini muffins – perfect for little (and big) lunchboxes.

Ingredients

  • 3 ripe bananas
  • 1/4 cup yoghurt
  • 2 tbsp coconut oil melted
  • 1/3 cup maple syrup
  • 1.5 tsp vanilla extract
  • 1 flax egg/chia egg/egg
  • 2 tbsp almond milk (made with our Almond Mylk Base)
  • 1 cup plain flour
  • 1/2 cup oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1/4 cup coconut sugar
  • 1/2 cup of nuts/choc chips or dried fruit

Steps

Preheat oven to 170°C.

Combine wet ingredients and mix well.

Add dry ingredients and stir until all mixed well.

Add in your mix-ins.

Grease muffin tray and fill until just below the top.

For large muffins, bake for 20 minutes for mini muffins, bake for 12 minutes.
